The ingredients for our kitchen come from small, artisanal farms and producers in Mecklenburg-Vorpommern and the surrounding region – from people who practise their craft with dedication and respect for the produce and for nature. Here we would like to give them a stage.

In Western Pomerania, Olaf Schnelle grows rare herbs, edible flowers and unusual vegetables for top kitchens – and refines them through fermentation into intense, lively flavours.
- Fischerei Lohmen
Freshly caught freshwater fish from the lakes around Lohmen near Güstrow – including crayfish, pike and tench.
- Mühlenbäckerei
A Demeter organic bakery at Hof Medewege near Schwerin: breads and rolls from regional grain, baked fresh daily and without additives.

- Hof Zandershagen
A Demeter farm near Stralsund with Original Allgäu Brown cattle and its own dairy – butter and cheese specialities from the region.
